Yeast MuffinsMix 1 and 1/4 teaspoons active dry yeast ('ve used both regular and fast rise) 1 cup warm water (about 110 degrees)Let stand 5 minutes while you preheat oven to 400 degrees F.In a small bowl mix:2 cups SELF RISING flour 1 Tablespoons plus 1 teaspoon sugarAdd yeast mixture to flour mixture and stir in:6 Tablespoons salted butter, melted1 egg whiskedBatter will be slightly lumpy Spoon batter into 8 lightly greased muffin tins. Bake at 400 F. about 20 minutes (The top doesn't brown up much, so poke with a knife or toothpick to see if they are done)
OMD...That really looks like the look of disgust!
She was NOT happy that we were eating a little snack when they came out of the oven, after I told her she had to wait (if we feed her too early in the evening she wakes us up at 4:30 a.m. wanting to be fed).
