Wordless Wednesday -

The look you get when you tell the dog "it's too early for your supper" and she catches both Mom and Dad with a mouthful of freshly baked yeast muffin, which you did NOT share with her.

    1. Yeast Muffins

      Mix 1 and 1/4 teaspoons active dry yeast ('ve used both regular and fast rise)
      1 cup warm water (about 110 degrees)

      Let stand 5 minutes while you preheat oven to 400 degrees F.

      In a small bowl mix:

      2 cups SELF RISING flour
      1 Tablespoons plus 1 teaspoon sugar

      Add yeast mixture to flour mixture and stir in:

      6 Tablespoons salted butter, melted
      1 egg whisked

      Batter will be slightly lumpy

      Spoon batter into 8 lightly greased muffin tins. Bake at 400 F. about 20 minutes (The top doesn't brown up much, so poke with a knife or toothpick to see if they are done)

    1. She was NOT happy that we were eating a little snack when they came out of the oven, after I told her she had to wait (if we feed her too early in the evening she wakes us up at 4:30 a.m. wanting to be fed).
