Shrove Tuesday - Pancake Day
The origins of this day, the week before Ash Wednesday is one steeped in history, It's also really good covered in real maple syrup with sausages, especially as "breakfast for dinner".
As usual, I was left with a bowl of NastyDryCrap™ and water but if I give Mom the sad eyes she'll give me a treat later.
Dem pancakes look tasty. We does da cajun food round here.

The Mad Scots
Mom's favorite pancake recipe.
ReplyDelete1 cup flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 Tablespoons sugar
Mix in small bowl
1 cup buttermilk or plain kefir (she usually uses kefir for really fluffy ones)
1 egg at room temperature
1/2 tsp real vanilla extract
whisk in small bowl
Slowly stream in 2 tablespoons of melted butter, whisking constantly.
Stir into dry ingredients just until combined. These are quite fluffy so smaller is easier to handle.
Cook on a griddle. Makes about 8-10 smaller sized pancakes, enough for two hungry people
If you don't have kefir or buttermilk - pour a cup of milk, remove 2 or 3 teaspoons of milk and replace with lemon juice and let sit 10 minutes.
Whitley - Mom's partner at squirrel centra is a former Marine pilot and Cajun - she's even learned how to speak a little Cajun which makes me laugh. He watches her back and that makes me happy.
