Sunny's Sourdough Pancakes: In one bowl mix: 1 cup sourdough starter (made with whole wheat pastry flour) 1 large egg 1/2 tsp vanilla 1/2 cup milk or non dairy milk 2 Tablespoons organic sugar whisk and drizzle in 2 Tablespoons melted unsalted butter
In another bowl mix 1/2 cup unbleached flour (I used white, whole wheat works fine) 2 tsps baking powder or 1 Tablespoon Hain Sodium Free baking powder 1/2 tsp baking soda or 1 tsp EnerG Sodium Free Baking Soda replacement
Combine wet and dry ingredients stirring JUST til combined. Let set 2 minutes. Batter should be thick enough to "dollop" onto the griddle (as opposed to pouring). Add additional flour or milk as needed (it really depends on how thick your sourdough was). Stir and cook on lightly greased griddle flipping once.
