Daniel - Mom is going to be taking a nap here in a minute as she goes on call at midnight, and usually get a nap in first in case the bat phone rings at 2 a.m. I'll get her recipe up tomorrow!
Here is Mom's basic recipe. Mom doesn't measure EXACT amounts, but this is close and if your eggs are large and you need more puff pastry - it' easy to thaw another piece or two.
6 ounces Cream Cheese, softened a couple of shakes of dried parsley 3/4 teaspoon Jane's Krazy Mixed Up Salt (or seasoning salt) 1/4 teaspoon black pepper pinch of crushed red pepper (optional) 2/3 cup shredded Monterrey jack cheese 5 large eggs, beaten 8 slices bacon cooked and crumbled 3-5 puff pastry sheets - thawed and unfolded.
Preheat oven to 375 F. (200C)
Cook bacon and crumble. Remove all but a bit of grease or add a little butter if you're doing "vegetarian" bacon strips.
Scramble eggs until still slightly "wet" but mostly cooked and stir in cream cheese and seasoning, stirring to melt cream cheese. Add chopped bacon and cheese and remove from heat. Use a glass to cut 4 inch circles from the puff pastry. Put a couple heaping Tablespoons of egg mixture on each on and fold, crimping with the tines of a fork.
Bake 15-20 minutes on a baking pan sprayed with non tick spray and serve immediately. Leftovers heat up nicely wrapped in a paper towel an microwaved. They're not as crisp but still goo.
