Dad is Home! Dad is Home!

Dad has returned from two weeks in the UK for business.  I'm sure he is tired of pub food (especially from that one place that Mom refers to as the "Grease and Weasel") and wants a vegetable that's not "boiled potatoes" or "mutton".  (Mom is English, she's a Woodworth by birth, so she's allowed to make fun of her home country's cooking).

Let the American Foodables begin!  Fried chicken breast with Chicago Italian Pickled Pepper mix, salad, coleslaw, buttermilk biscuits and Mom's Slow Cooker Mac and cheese.

Slow Cooker Mac and Cheese

2 cups uncooked elbow macaroni
1 can (10-3/4 ounces)  Campbell's condensed cheddar cheese soup, undiluted
1 cup 2% milk
1/2 cup sour cream
1/4 cup unsalted butter, cubed
1/2 teaspoon onion powder (f you don't eat onions a pinch of cumin is a good alternative.
1/4 teaspoon white pepper
1/8 teaspoon salt
1 cup shredded cheddar cheese
1 cup shredded fontina cheese
1 cup shredded provolone cheese
DIRECTIONS
Cook macaroni according to package directions 7-8 minutes so it is still a bit firm (it will soften further as it heats through) Meanwhile, in a large saucepan, combine soup, milk, sour cream, butter, and seasonings; cook and stir over medium-low heat until blended. Stir in cheeses until melted.

Drain macaroni; transfer to a greased 3-qt. slow cooker. Stir in cheese mixture. Cook, covered, on low 1-2 hours or until heated through. Yield: 8 servings. (freezes really well for single serve "Bachelor" meals).

  1. What a nice way to welcome Dad home!!! Mom says that chicken breast looks very yummy, especially with that pickled topping. We bet your Dad was happy to see you too, Abby.

    1. WE have found the Chicago style pickled peppers and veggie mixture is very hard to find elsewhere. Not found when visiting Dad. I make this Italian Beef that my husband could eat every week. You pour a jar of the peppers and veggies (with juice) over a roast, add a packet of Good Seasons Italian dressing mix to the empty jar, fill with beer, shake and pour over the roast. 6-8 hours later in the slow cooker shred for Italian buns with au jus to dip in. If you want a jar, drop me your address in a "Do Not Post" comment and I'll mail you some.

  4. Glad "Dad" is safely home from his travels. The dinner is a perfect welcome home, and hits all those "comfort notes" on a cold night!

    PS: I heard that there are going to be some "Whole Foods" that are going to have Mac 'n Cheese Bars. I must find which ones! :-)

  5. OMD, I thinks even Ma could make that mac and cheese! She can't eats raw onions or garlic, butts she can have the powder form, butts thanks for the tip on cumin! I don't know if I would have thought of that. Oh, and Ma makes fun of her Irish dishes too, butts shhhhh, don't lets her relatives know...they can be a bit sensitive sometimes....☺

    1. Unfortunately, where his company's factory is located is a very small village and there is only ONE pub, the G and W. Mostly he gets canned soup and heats it up in the coffee pot, though I think one night they drove a ways to find a Curry Place.

  7. Yummy! We're so glad your Dad is home! My Dad was gone for only two days. I serenaded ghostwriter almost all of those days with lots and lots of barking. (I'm not sure she appreciated it.)
