Sunday Eats delayed by Overtime - Abby Lab and the World's Best Muffins

Grumpy Cat's got nothing on me!~

Someone was grumpy dog Sunday morning since Mom and Dad slept in and breakfast and walkies were late. (Stare. .  scowl. .  stink-eye. . )

Will everyone cheer up if I make some muffins?


Yeast muffins. They don't rise like yeast bread, they're in the oven in 10 minutes but they have a fresh baked bread taste and an incredibly moist and fluffy interior. They're not very sweet so they're perfect for breakfast with some jam or honey or with butter for dinner.

Prehat oven to 350 F.  Spray a muffin tin with non-stick spray.

In a cereal or small bowl mix:

1 cup warm (not hot) water
1/2 packet of Yeast (a pinch over 1 teaspoon)

Stir and let sit while you get dry ingredients ready (aim for 5 minutes)

In a big bowl mix:
2 cups flour
1 Tablespoon baking powder
1 Tablespoon plus 1 teaspoon sugar
1 teaspoon salt

Melt 6 Tablespoons of butter in the microwave

Whisk 1 egg into yeast/water mixture.

Add that to flour mixture and stir until mostly mixed up but not completely.

Stir in melted butter until mixture is incorporated.  Batter will be fairly thick and a bit lumpy. Do not overmix, stop stirring when you no longer see any flour or melted butter.

Place in muffin tins (makes 9-10) and bake for 22-24 minutes.
