3/4 cup all-purpose flour
1/3 cup plus 2 Tablespoons stone ground cornmeal
1 Tablespoon sugar
2 teaspoons baking powder
1/2 teaspoon salt
Mix in another bowl:
1 egg, whisked,
1/2 cup plus 2 Tablespoons low-fat milk
2 Tablespoons melted butter
Note: To make gluten-free, use a gluten-free cornmeal such as Bob's Red Mill, King Arthur's Gluten-Free All-Purpose flour and add 1/2 teaspoon xantham gum
Prepare to get "the look" from the dog while you eat.

Cornmeal pancakes?! SHE has had cornmeal mush, cornbread, buckwheat pancakes, but didn't know about cornmeal pancakes. Might try it if we can find some good cornmeal. Usually we have to use polenta.

Thanks everyone. Mom has fun sharing her foody posts. Dinner was turkey meatball soup (and I got some as it had no salt or garlic just some dog safe Italian seasoning and broth she made out of roast chicken bones). It was REALLY good.
ReplyDeleteDad's taking vacation this week to redo some plumbing in the basement for Mom's new washer and dryer, but she has to drive to Squirrel Central at o-dark hundred. Dad and I will be fine as I saw where Mom hid the butter cookies today.

I think I mentioned at a previous venue that my Mom made what we called corn fritters -- although they were cooked on a griddle like pancakes, not fried -- and added creamed corn to the recipe.
