Should I Stay or Should Eggo?

What are you making out there?

Abby remember when you barked at the
'Big Brown Truck of Doom" yesterday?
He was bringing me this special waffle iron."
Oh, yes, from the great AMAZON region of South America.
You get a LOT of stuff from that particular jungle.
I bow before you oh great waffle iron beast!
"It's Swedish pancake batter Abby.  It's extra fluffy as I separate the eggs and whip the egg whites into a
soft meringue then fold into the buttery batter.
with the yolks and milk and stuff."

"They're thinner than regular waffles crispy
on the outside and moist in the middle."
That smells yummy!  How many do I get?
What do you mean "grains like wheat upset my tummy?
This is just WRONG.
You're not supposed to have dairy but when Dad is
out of town you eat a big bowl of mac and cheese
and subject me to "Toot-O-Rama" all evening.
And do I say anything?
No, because I love you more than gas.
I'm calling my Congresscritter!
Dad's slaving away on the road eating
Hilton gruel and you're making
waffles and not sharing.
Beep!  There's another one cooked, just torture me
here with crunchy buttery goodness, I can't have.

How about a wheat free pizza bone instead Abby?
That would be a big YES.  Thanks, Mom!

  2. Those waffles look almost good enough to eat right off the laptop screen! Did your Mom make those cook pizza bones for you too - they look even tastier.

    1. Ingredients

      2 cups of Almond Flour

2 cups of Brown Rice Flour

      1/2 cup of Corn Meal

      1 egg

      1 3/4 cups of water – 2 cups of water…if the dough is a little dry…just add a little bit more water : )

3 tablespoons of olive oil or vegetable oil

      2 tablespoons of parsley

      1 teaspoon of basil

      1 cup of grated cheddar

1 cup of chopped sundried tomatoes. (If you are using oil packed…use the oil from the tomatoes instead of olive oil or vegetable oil…a lot of extra flavor )

Just a small handful of diced bacon or ham (minimally processed)

      Directions

Time to fire up the over to 375 degrees

Put all of your ingredients in a large bowl…mix well then flour a working space and knead the dough till it well formed (it will be a stiff dough).

Roll out the dough till it is approximately 1/2″ thick and then cut out any size or shape you would!

Once they are all cut out and on a greased baking sheet or placed on parchment they get popped into the over for approximately 50 minutes.

After 40 minutes…I take them out…brush them with oil and sprinkle some extra cheese on top…it’s a little something extra but it does not have to be done : )

    1. Grains like wheat give me really bad dogrrhea and with it being winter and me not wanting to go out to potty anyway, not a good thing, Mom says. I enjoyed my pizza bone.

  6. Pizza bones? Y-u-m. Think that particular treat is much better than pancakes. At least for pooches. Us huMoms however, think those Swedish pancakes are pretty darn tasty looking.
