Thanks Nola - it made a lot - we each had a big bowl and there was enough left over for at least another 4-5 servings so I sent my husband back to our family home with a big tupperware full.
The muffins were a hit. I'd run out of sugar with moving to a new crash pad (he was down this weekend as I was on call with race week) so honey from a friends beehive filled the bill. They didn't even need any additional butter or honey.
Frankie - Mom has has high uric acid levels in her blood since she had some surgery (I'm not sure what it was but she said the doctors made her into a "sports model") and went into something called "Men! OH . . . . Pause" so she doesn't eat meat very often and lots of veggies and brown rice to keep that in check so she doesn't develop gout which she was told HURTS.
But she makes pancakes and bacon every Saturday morning and I get some.
Don't look so disappointed...that looks pretty good to us....just think how awesome that would be over some kibble......and a whole tub of butter on them muffins......wait...we will be over to eat!

ReplyDeleteVeggie Lentil Soup
ReplyDelete1 box veggie stock (about 3-4 cups)
1/2 cup water
3/4 cup dry lentils
Mix and cover and cook on low at a gentle simmer for 20 minutes.
While that cooks, saute 1/2 of a large sweet onion and a teaspoon of jarred garlic in a little olive or coconut oil until softened.
Chop a few baby carrots.
Add veggies and the following to the soup when your 20 minutes are up and cover again.
1/2 teaspoon marjoram
1/2 teaspoon oregano
1/2 teaspoon thyme
pinch of crushed red pepper
1/4 tsp black pepper.
Cook covered another 30 minutes until carrots and lentils are soft.
Just before serving, turn off heat and stir in 1 Tablespoon of balsamic vinegar
Honey Butter Muffins -
2 cups White Lily® Enriched Bleached Self-Rising Flour
1/3 cup honey
3/4 cup milk
1 large egg, lightly beaten
2 tablespoons cooking oil
2 tablespoons melted butter.
Mix dry ingredients,
Mix wet ingredients
Combine JUST until moistened there will be lumps
Bake in preheated 400 F. degree oven about 18 minutes in a pan sprayed with non stick spray.
These are very moist, almost cake like muffins. Recipe easily cuts in half, just use a small egg in place of half a large egg.
